One reel to reel recording. Cantrell served as the emcee. Louis discussed Haitian cooking, including a demonstration of beignet making. Also food during Caniveral. Each year at the Florida Folk Festival, the Florida Folklife Program emphasized a particular culture, tradtions, or geographic area. One audio cassette. Held at the Seminole Inn in Indiantown. Julienne discusses Haiti, Haitian foodways, immigrating to the US, cooking, Easter foods, cooking grapes and goats, and Jamaican foods. In 1992, the Palm Beach Community College contracted the Florida Folklife Program to conduct ten days of fieldwork in March 1992 around Lake Okeechobee for a Lakefront Legacy Festival later that year (16 May 1992). Headed up by FFP folklorist Debbie Fant, and assisted by Robert Stone and Robert Shanafelt, the fieldwork involved 26 informants, slides, print images and recorded interviews. In the end, the FFP recommended seven people for festival participation.

Held at Whitton's Islander Restaurant, he discusses Jamaica; immigrating to the US; the restaurant business; Jamaican foods and supplies (and how hard they are to get in Florida); the menu; Haitian cooking; Jamaican drinks; Latin American foods; buying foods from farmers; and other foods prepared there. Fourteen color slides. Louis cooking Haitian food. The Dade Folk Arts Survey was conducted in 1986 by folklorists Tina Bucuvalas, Nancy Nusz and Laurie Sommers in order to identify folk arts and folk artists for the special folklife area at the 34th Annual Florida Folk Festival. The traditions are mainly Haitian, Jamaican, Mexican, Bahamian, Cuban and Jewish and cover a wide range of skills and art forms.
